To be yourself, and be honest. Carluccio's looks more at the personality of a person, and how you will work within the team and ethos, as well as with the customers rather than the experience. Experience is useful, and occasionally necessary, but not an important factor. It does however help with your understanding the nature of the business.

Application Advice:
Do not enter into this lightly if you have not worked in hospitality, as this role requires a person to be of a certain calibre in order to perform this job successfully as well as gain immense enjoyment and satisfaction. The training is excellent but it is incredibly demanding both physically and mentally, therefore you need to be prepared to sacrifice your personal life at times in order to come into work at a minutes notice, deal with emergencies and generally demonstrate that you are a flexible and consistent individual. It will not be a worthwhile experience if you do not enjoy hard graft, the ability to make mistakes and are not able to learn from them quickly. Lastly, you need to have a genuine passion for people in all ways, from interaction with customers to getting to know your staff in order to get the best performance possible out of them.
Interview Advice:
Be yourself! As long as you remain, however cheesy as it sounds, true to yourself on the day this will come across to the HR team. They are not looking for ready made managers as this can only come with the training that follows, rather they are looking for nice people who will compliment and promote the ethos of the company. Therefore, it is no good to be stressed and flustered on the day, smile, keep calm and enjoy the yummy food on the day!

The graduate assessment began with a telephone interview - do your homework on Carluccios. Its got such an amazing history, you'll love reading about it.
Then if successful there's an assessment day with roughly 10 other graduates. On the assessment day there are lots of roleplays and scenarios which you can't practice for, but the best bit of advise I could give would be to just be yourself.
