These interviews are not performed as you would expect. Whitbread really do aim to keep it personal and comfortable so it will feel more like a normal conversation. Try to be as calm as possible before your interview and let it become relaxed during (this will be the aim of the interviewer too) so your nerves don't cause you to say/do anything that doesnt reflect you.
